Toast de Patate Douce à l’Avocat

Ingredients: Grilled sweet potato slices, mashed avocado, pumpkin seeds, cooked garlic clove, spice mix, ground cumin, lime, salt, pepper

    1. Slice a sweet potato into rounds about 1/4 inch thick.
    2. Toast the slices in a toaster or oven until tender and slightly crispy, about 10-15 minutes.
    3. Mash a ripe avocado with salt, pepper, the juice of half a lime, spices (Mexican blend, cumin), and 2 garlic cloves cooked in hot water. Spread it over the sweet potato slices.
    4. Sprinkle with pumpkin/sesame/sunflower or poppy seeds as desired.
