Muffins à la Banane et aux Noix muffins

ingrédients: Ripe bananas, walnuts, oat flour, eggs, 3 tablespoons of skyr to make the muffins less dry

    1. Preheat your oven to 180°C and prepare a muffin tin with paper cases.
    2. In a large bowl, mash 3 ripe bananas and add 2 eggs, 100 ml of melted coconut oil, and 100 g of coconut sugar (or other natural sweetener). Mix well. Then add the 3 tablespoons of skyr.
    3. Stir in 200g of oat flour and a teaspoon of baking powder, then add a handful of chopped walnuts.
    4. Divide the batter among the muffin tins and bake for about 20 minutes. Prick with a knife to check for doneness. The blade should come out with no batter on it.
    5. Let cool before enjoying with a little homemade apple compote.
